A simple and tasty way to get in raw egg yolks for those who struggle eating them straight up. Very nutrient-dense and healthy.
- ⏲️ Prep time: 1 min
- 🍳 Cook time: 5 min
- 🍽️ Servings: 1-2
- 🔪Tools: Jar, blender/whisk
Ingredients
- 3 dl liquid Kefir
- 2-4 egg yolks (highest quality eggs you can get)
- Stevia/your sweetener of choice (optional but recommended)
- Real vanilla extract or vanillin (optional but recommended)
- 1.5dl Cream (very much optional but very tasty; try to get it raw)
- Cinnamon (very optional; make sure it’s Ceylon and not Cassia)
Directions
- Pour your Kefir into a large glass jar or a large blender container.
- Crack the egg yolks into the kefir, I recommend 4 but you can use less if it tastes eggy to you (it shouldn’t once mixed). Discard the egg whites or use them for something else.
- Add Stevia, Vanilla/Vanillin, and Cinnamon if you want.
- Add 1.5 dl of cream if you would like a tastier, smoother, and creamier shake.
- Whisk thoroughly by hand until fully dissolved and no egg bits are left. Alternatively, use your blender on the lowest setting. Ensure you have some leftover empty space in the blender jar at the top because blending the kefir can increase the volume somewhat and make it foam over. Avoid a mess! Blend slow!
- Pour into a glass for serving.
Note:
- Egg yolks are extremely healthy and nutrient dense. Eat them raw; eat them often!
- Cassia Cinnamon is lower quality and high in antinutrients that tax the liver. Ceylon is very low in these and much healthier.
- What’s the difference between Vanilla and Vanillin? Vanilla is a mixture of dozens of compounds, while vanillin is only the main “taste” molecule in vanilla. It is usually created artificially and much cheaper than real vanilla beans or extracts.
- Vanillin has several proven cognitive benefits; despite it being non-natural in origin, it is not only tasty but healthy for you. Do not feel bad if you substitute real vanilla for this.
- Please note that high-quality Stevia will have no off “licorice” taste. If yours does, find a better stevia product.
- Many people who get an upset stomach from whole raw eggs can still stomach raw egg yolks. Usually people only react to raw egg whites, so give this recipe a try.
- Note that kefir is very strongly probiotic, and drinking large amounts can upset the stomachs of people not used to fermented foods. Consider drinking small amounts of plain kefir for a few days first if this applies to you.
