Start your day off right with these delicious and nutritious egg white cheese muffins! Whether you need a quick snack on-the-go or a satisfying meal at home, these muffins are the perfect choice. They remain flavorful and moist even as they cool down, making them a versatile and tasty option for any time of day.

Ingredients
- 243 grams of eggwhite (4 large)
- 75 grams of cottage cheese (1/3 cup)
- 75 grams of feta cheese (or another creamy brine matured cheese that you prefer)
- 125 grams of mozzarella
- 200 grams of ham, bacon, sausage or ground beef
- 75 grams of gruyere or another salty hard cheese
- 20 grams of butter
Directions
- Preheat the oven to 150°C.
- Mix the egg whites, cottage cheese, and feta until smooth.
- Cut the meat into small cubes. Grate the mozzarella and gruyere cheese separately.
- Fry the meat in butter until golden brown (if using ground beef, season generously with salt) and allow it to cool slightly.
- Use the meat juices and melted butter to grease the muffin molds.
- Add the grated mozzarella and about ¾ of the meat to the egg white mixture and stir them in well.
- Pour the mixture into the molds and make sure each muffin has an equal amount of cheese and meat.
- Sprinkle the grated gruyere and remaining meat on top.
- Bake them for 30 minutes, or until the cheese on top is golden brown.
- Allow the muffins to cool in the molds for 5 minutes at room temperature before removing.
Note:
- For a delicious twist, do not mix the feta cheese in during the second step. Instead, chop it up and stir it in with the meat and mozzarella.
- Experiment with different types and quantities of cheese and meat to discover your perfect combination.
